Dog's Five Pepper Texas Chili

A friend of mine loved my chili so much I gave her this recipe. She gave it to her sister who in turn made it for her kid’s 10th birthday party.

 

It turns out that a chili containing habanero pepper may not be the best thing to give small children.

 

Dog’s Love Chili(feeds 10-12)

 

Cooking time, at least 6  hours!(I usually cook for a couple hours one evening, refrigerate overnight, then cook the rest in the morning.)

 

Ingredients

 

5 lbs. coarsely chopped BEEF (carne asada burrito meat)

one 6-pack BEER

 

one 3 oz. bottle of CHILI POWDER

one tiny .9 oz. jar ground CUMIN

5-6 cloves GARLIC, sliced

1 small/medium HABANERO (world’s hottest pepper), minced

1 tbsp. CAYENNE PEPPER

2 pickled JALAPENOS, chopped (or ½ cup Jalapeno slices)

SRIRACHA hot chili sauce (the red paste with the rooster on the bottle)

 

2 or 3 small 6oz. cans TOMATO PASTE

1 large WHITE ONION, coarsely chopped

1/2 bunch FRESH CILANTRO, chopped with stems discarded

2 tbsp. FENNEL SEED

SALT and BLACK PEPPER

 

Directions

 

In a skillet, brown beef, and drain fat. Combine the beef and beer in large pot. Boil. Add chili powder, cumin, garlic and some salt. Stir frequently.

 

Add the heat! Toss in the habanero, cayenne, and jalapeno. Give the Sruracha bottle a good squeeze. Don’t worry if the mixture seems overly spicy; you’ll fix that later. At this point, you can let the pot cool, refrigerate, and resume in the morning. Or continue:

 

The beef, beer and spice concoction needs to cook on medium heat for several hours until the beef becomes mushy. Stir occasionally. Skim grease off the top.

 

Once the beef breaks down, add 2 small cans of tomato paste which will thicken the chili and reduce its spiciness. Also add onion, cilantro and fennel seed. Simmer an hour.

 

Add salt and black pepper to taste. If the chili becomes too thick, add water or beer; if it’s too spicy, and more tomato paste; if it’s not spicy enough, add more Sriracha sauce.

 

(Note: Many recipes thicken chili with masa flour or dilute with beans. Don’t do that with this recipe, or you will go to hell. If you insist, you can serve the chili over beans in a bowl, just don’t cook them together.)
